Apple, Quinoa and Oat Bites

  • 85g quinoa

    65g rolled oats

    1 1/2 large apples, peeled and diced

    2 eggs, lightly whisked

    30ml honey or agave

    5g ground cinnamon

    5g ground nutmeg

    Coconut oil (or olive oil) spray
  • Preheat oven to 180 degrees.

    Rinse the quinoa in a strainer thoroughly.

    Bring 1 cup of water and the quinoa to the boil in a small saucepan, cover and simmer for 10 minutes or until all water has been absorbed.

    In a large mixing bowl, mix the cooked quinoa and remaining ingredients until combined.

    Spray a 12-hole muffin tin with coconut oil or olive oil.

    Scoop the quinoa mixture evenly into each muffin hole.

    Place muffin tray into the oven and bake for 15-20 minutes or until browned.

    Serve or store in an airtight container in the fridge.
