Avocado Toasts

  • 1 or 2 slices of wholegrain bread

    1/2 small avocado

    2 eggs

    Salt and Pepper to taste (optional)
  • Start by making your hard boiled eggs (poached or fried could also be used).

    Place your eggs in a large saucepan, cover them with cool water by 1 inch.

    Slowly bring the water to a boil over a medium heat; when the water has reached a boil, cover and remove from heat for approx 10 minutes.

    Place your bread into the toaster.

    While your bread is toasting cut your avocado in half and scrape out the inside of 1/2.

    When the toast is done spread the avocado on your bread like butter.

    After around 10 minutes, transfer the eggs into a bowl; place under cool running water to stop the cooking.

    Peel the eggs, then cut them into slices and place on top of your toast.
