Beef & Banana Curry

  • 15g coconut oil

    1 brown onion, diced

    2 cloves garlic, minced

    15g curry powder

    400g organic steak, cut into long strips

    3 tomatoes, diced

    1 large banana, mashed

    1 fresh lime

    1/2 red pepper, cut in big strips

    370g broccoli, cut into bite sized pieces.
  • In a frying pan or wok, warm the coconut oil on a medium heat.

    Add onion and garlic and cook until transparent.

    Sprinkle the curry powder onto onion/garlic mixture and make a paste, stirring for a minute on low heat.

    Return the stove to medium heat and place steak strips into the pan, stirring until all steak is browned.

    Add the fresh tomatoes, lime juice and mashed banana, mixing thoroughly for 2-3 mins.

    Place on a low heat and simmer covered for 30-45 mins.

    Before serving, turn the pan onto a high heat and lightly fold the pepper strips and broccoli florets into the beef, cooking for another 5 mins and then serve.
