Brown Rice & Orange Salad

  • 90g brown rice

    1/4 medium carrot, sliced

    1/4 medium pepper, sliced

    1/2 orange, skin removed and sliced

    60g cabbage, sliced

    80g cooked chicken

    20g raisins

    Dressing:

    1/2 orange, skin removed

    3g apple cider vinegar

    3g honey

    15g coriander, finely chopped

    7g olive oil

    15ml water

    Sea salt, to taste

    Freshly ground pepper, to taste
  • Add all the salad ingredients to a bowl and combine.

    Dressing:

    Combine all dressing ingredients except the coriander in a food processor until smooth.

    Add corriander and pulse a few times until incorporated.

    Add the dressing to the salad and toss to combine, serve.
