Cherry Tomato Courgette Pasta
- 4 small courgettes (or a bag of courgette spaghetti)
10 cherry tomatoes, cut in half
2 twigs fresh rosemary, cut roughly (dried would do but not as fragrant)
200g canned tomatoes
1/2 small brown onion, diced
1 long red chilli (optional), chopped finely
5g coconut oil
1 clove garlic, diced
Vegetable spiralizer (unless you buy the courgetti spaghetti)
- Spiral the courgettes using the vegetable spiralizer so it looks similar to spaghetti.
Heat the oil on a medium heat in a large fry pan and cook the onion and garlic until soft.
Add the cherry tomatoes, chilli and rosemary to the pan and cook for one minute.
Stir in the tinned tomatoes and cook for another 2-3 minutes.
Finally, add the courgette spirals to the pan and combine with the pasta sauce for 1-2 minutes (just enough to warm the courgette) and serve.
