Courgette Curl Bake

  • 2 large courgettes

    10 cherry tomatoes

    6 fresh garlic cloves

    50g feta cheese, crumbled

    10-15 fresh thyme sprigs

    15ml coconut oil, melted

    salt and pepper, to taste

  • Slice cherry tomatoes into quarters.

    Fresh garlic cloves, peeled and sliced into quarters.

    Preheat oven to 180 degrees.

    Using a pastry brush, brush the inside surface of the baking dish with the melted coconut oil, set aside.

    Using a vegetable peeler, run the length down the courgettes, creating ribbons.

    Roll each ribbon into a curl and line them up on a small baking dish.

    Once the dish is full, place the sliced tomatoes inside some of the curls as well as the garlic ‘stuffing’ the middle.

    Crumble about 2/3 of the feta on top and the same with the thyme (remove leaves from stalks) and sprinkle on top.

    (Reserve the remaining feta and thyme for garnish after you remove from oven).

    Bake in oven for approx 30-40 mins, or until browned on top..
