French Toast

  • 1 egg

    1 egg white

    5g (2 tsp) ground cinnamon

    5g (1 tsp) vanilla extract

    5g (2 tsp) desiccated coconut

    4 slices wholegrain bread

    8 strawberries, cut in quarters

    65g milk (or almond or rice milk) Honey or Agave (optional), to drizzle
  • In a medium sized bowl, whisk the eggs, cinnamon, vanilla, a sprinkle of coconut and the milk.

    Dip each slice of bread into the egg mixture and place into a large non-stick frying pan, preheated on medium heat.

    Cook the French toast for a few mins until ready to flip and then cook the other side until browned both sides.

    Sprinkle the French toast with the remaining coconut, and top with strawberries.

    Drizzle with honey or agave (if desired).
