Fried Courgette Crisps

  • 10g olive oil

    1 medium-large courgette (sliced into circles)

    Salt and pepper to taste
  • In a pan heat the oil.

    Place the courgette flat down in a pan so every piece is touching the bottom fully.

    Leave them and don’t stir.

    Wiggle the pan around to move the oil through them, keep checking them to see if the bottom of them has crisped up.

    Turn and repeat.

    Enjoy straight away!
