Healthy Eggs Benedict

  • 1 egg

    2 slices of ham off the bone or smoked salmon

    5g of kale leaves

    1 spring onion (optional)

    Sauce:

    1/4 large avocado

    1/4 small fresh lemon

    5g honey or agave (optional)

    20ml hot water

    5g coconut oil
  • Poach the egg.

    Meanwhile add the sauce ingredients (except the coconut oil) to a blender, and blend until smooth.

    Drizzle in coconut oil and lightly blend again.

    Serve the ham and egg on a bed of kale leaves.

    Top with avocado sauce and spring onions (optional) and serve.
