Loaded Sweet Potato

  • 1/4 red onion, finely chopped

    1 small pepper, finely chopped

    1 tomato, finely chopped

    1 kale leaf, finely chopped

    2 dollops cottage cheese or Greek yoghurt (optional)

    5g oil (coconut or other)
  • Preheat oven to 180 degrees.

    Place the sweet potatoes into the oven for around 1-1.25 hours or until the flesh is soft.

    In a non-stick frypan, melt the oil.

    On a medium heat, add the onion and garlic and cook until softened.

    Add the pepper, tomato and kale to the pan and cook for around 5 mins.

    Once the sweet potatoes are cooked, cut the sweet potato lengthways from one end to the other end but only half way through.

    Load the sweet potatoes with your ingredients in the pan and serve with a dollop of cottage cheese or Green yoghurt (if desired) on each sweet potato.
