Quick Roasted Tomato & Chicken Pasta

  • 1 packet slimpasta/low carb pasta if you can find it (you can purchase this in Holland & Barrett) or wholemeal

    6 cherry tomatoes

    100g marinated chicken, sliced into strips

    5g chopped fresh flat leaf parsley

    2 cloves fresh garlic (or 5g crushed garlic)

    10-15g extra virgin olive oil

    Cracked pepper to taste
  • Place tomatoes, garlic, cracked pepper and olive oil in a small baking dish.

    Bake in a hot oven (180 degrees) for approx 15 mins or until the skin of the tomatoes splits or shrivels.

    Meanwhile, with the tomatoes in the oven, prepare the slimpasta/low carb pasta as per directions on the packet, and have your parsley and chicken ready to combine together.

    When the tomatoes are ready, take out of the oven and put the slim pasta, chicken and parsley into the baking dish and stir to combine together and coat it in the juices from the tomatoes.

    Arrange on your plate and drizzle with a little more extra virgin olive oil and cracked pepper to taste. Enjoy!
