Quinoa & Halloumi Tabbouleh Salad
- 400g quinoa
18 cherry tomatoes, cut into quarters
1/2 medium red onion, finely chopped
1 long or red green chilli, finely chopped (optional)
15g fresh mint leaves, finely chopped
25g fresh parsley, finely chopped
118ml freshly squeezed lemon juice
1 clove garlic, minced
5g honey (or agave syrup)
60g halloumi (optional)
- Rinse the quinoa in a strainer thoroughly.
Bring 1 cup water and the quinoa to the boil in a small saucepan and simmer for 10 mins or until all water has been absorbed.
In a large bowl, add the cooked quinoa, tomatoes, onion, chilli, mint and parsley and mix together.
In a small bowl mix the lemon juice, garlic and honey to create your dressing.
If you choose to add halloumi you can either grill it slightly so it browns on the top, chop it up and add to salad or add it how it is.
Pour the dressing over the salad and serve.
