Salmon Patties

  • 1/2 large sweet potato, chopped into small pieces

    60g ground almonds

    5g parsley, chopped finely

    30g red onion, chopped finely

    15ml lemon juice

    1 egg

    100g canned salmon

    15ml olive (or coconut) oil
  • Boil/steam the sweet potato until soft.

    Transfer the sweet potato to a large mixing bowl and mash.

    Add the ground almonds, parsley, red onion, lemon juice, egg and the salmon to the bowl and mix thoroughly.

    Heat a non-stick fry-pan on low-medium heat and add the oil.

    Form 6 patties from the mixture and gently place into the fry-pan, cooking for 5-10 mins on each side or until lightly browned.

    Serve hot.
