Sweet Potato & Shiitake Mushroom Salad

  • 1 cooked sweet potato, sliced

    30g spinich

    4 shitake mushrooms, sliced

    1/4 cup feta cheese

    2 slices tomato

    15ml olive oil

    15g dijon mustard

    1 squeeze lemon juice
  • Cook the sweet potato in the oven for around 30-40 mins until cooked.

    Chop up all the other ingredients and add to the bowl.

    When the potato is cooked, chop and add to the salad.

    Drizzle with olive oil, dijon mustard and lemon juice.
