Veggie Tacos

  • 1 medium sweet potato, peeled and cut into 2cm cubes

    2 cups purple cabbage, chopped finely

    2 cups green cabbage, chopped finely

    1 tsp cumin

    1 fresh lime

    6 dollops greek yoghurt (optional)

    1 small avocado, mashed

    1 tomato, diced

    1/2 red onion, diced

    6 small wholegrain tortillas

    Sea salt, to taste
  • Preheat oven to 180 degrees C.

    Place the sweet potato onto a baking tray lined with baking paper.

    Lightly spray with sweet potato with oil spray and place in the oven for 20-30 minutes or until soft.

    In a small bowl, mix the avocado, tomato and onion to make a guacamole.

    Warm your tortillas under the grill.

    Place your cabbage, sweet potato, guacamole and cumin seeds evenly down the middle of your tortillas.

    Top each taco with a dollop of yoghurt (if desired)
