Waldorf salad

  • 2 tbsp lemon juice

    200g low fat yoghurt

    3/4 tsp curry powder

    1/2 tsp ground cumin

    Salt to taste

    1 apple, cored and thinly sliced

    10g walnut halves

    Handful mixed greens

    1/2 celery stalk, chopped

    1 tbsp raisins

    2 tbsp parsley, chopped

    40g cooked chicken

    90g cooked quinoa
  • Combine all of the ingredients in a large bowl and serve chilled.
